RECIPE: Cardamom Fig and Lime Linzer Biscuits

EQUIPMENT:

  • Oven set to 170c

  • Cookie cutters of choice

INGREDIENTS:

  • 415g Butter, cold and cubed

  • 135g Icing Sugar, sieved

  • Zest of 2 Limes

  • 4g Salt

  • 20g Plum Jam

  • 75g Corn Flour

  • 375g Plain Flour

  • 10g Ground Cardamom

METHOD:

Mix everything together slowly until everything is combined and there are no lumps of butter**. Add the fig jam and mix through briefly to incorporate.

 Sieve the flours together, add the ground cardamom and gradually fold in butter mixture, making sure not to overmix the dough. Wrap the dough in clingfilm and rest in the fridge for at least an hour*** (overnight if you have the time- these guys want as much rest as you can give them.)  Once rested roll out your dough 0.5cm. Cut with your chosen cutter and return to the fridge arranged on your baking trays and rest for a further hour. Once rested, bake until golden (12-14 mins).

Enjoy your Linzer on its own or they would work very well with a panna cotta or crème brulee for a dinner party dessert.
