PART I: ALL HAIL BUTTER

Butter is long overdue a rebrand.

Many of us overlook the role butter plays in the kitchen, seeking to eliminate this wonderfully versatile ingredient at any given chance.

But butter may be my favourite ingredient

(top four at the very least).

In our first section of BUTTER SUGAR FLOUR EGGS, we will go through the recipes which define BUTTER and it’s use in the kitchen. We will explore what makes BUTTER so exciting to work with, find areas where we can play around with the rules it has and test the alternatives that are available to us.

We will use it conventionally, use it a bit differently and sometimes even swap it out entirely.
